Recipe for Southwest Chicken Pie

Nonstick spray coating
1 cup cubed cooked chicken
(suggest seasoned boneless breasts)
1 8-oz can whole kernal corn (drained)
1 4-oz can chopped green chiles (drained)
(suggest Old El Paso)
2 beaten eggs
2/3 cup milk
3/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup finely shredded cheddar cheese (2 -oz)
1/2 cup salsa
1/2 cup sour cream
- Spray a 9-inch glass pie plate with nonstick coating
- In a medium mixing bowl stir together
chicken, corn and chiles 
- Spread mixture into pie plate
- In the same bowl stir together eggs and milk
- Beat in flour, salt and pepper
- Then pour over chicken mixture
- Bake, uncovered in a 400 degree oven
for 25 to 30 minutes
or till top is set and lightly browned
- Then sprinkle with cheese and bake
for 2 to 3 minutes more or till cheese melts
- Serve with salsa and sour cream
Makes 4 servings
I usually toss in some extra
dried red and green chiles 
I brought back from Chimayo 
to add a little zest to any dish
